Recipes for low carb chicken tenders are on almost every beginner low carb website on the net.  They are amazingly simple to make, and no one would ever guess they are “diet food.”  I’m including them here only because not many of my readers spend a lot of time at low carb diet boards.  🙂

At some point, every new low carber will start craving something breaded and fried.  And even long-time low carbers sometimes miss an occasional junk food fix.

Here’s a legal solution!

Ingredients:

Fresh or frozen chicken breast strips
1 beaten egg
dry grated parmesan cheese (the kind in the plastic jar)
Oil for frying

Cut chicken breast strips into bite sized pieces.  Dip in beaten egg.  Put 1/2 cup parmesan in a bag and drop chicken pieces into bag, shaking to coat, adding more cheese as needed.

Fry chicken tenders over medium heat.  (High will burn the cheese.)  Cook just till white, moist and tender inside.  Drain on paper towels.

The cheese is pretty salty, so you might not need additional salt.  If you do, sprinkle the salt over the tenders while they are draining on the paper towels.

You can use the tenders as a main dish for a simple meal, in salads, or just as a snack.  I use spicy brown mustard with a little splenda stirred in to make a “honey mustard” dip.

The tenders are very portable and are easy to pack along for lunches or picnics.

Easy One Pot Low Carb Meal

Tonight I didn’t feel like getting creative in the kitchen, so threw together an easy one-pot meal.  I browned boneless beef short ribs in a little oil with peppercorns.  Then I added salt, celery seeds, a few red pepper flakes, and garlic.  After the meat was nicely browned, I added the water and threw in a large bouillon cube.

When the beef was done, I cut it in pieces, put it back in the pot and added chunks of onion and yellow and zucchini squash and cooked till the squash were almost done.  Then, about 10 minutes before serving, I added sliced napa cabbage.

It’s amazing how something so very simple can taste so wonderful — rich, satisfying and filling.

I made Ron a 3 minute chocolate cake for dessert.  I didn’t fix one for me because they are pretty high in calories and carbs.  But since Ron can handle a lot more calories and carbs than I can, I only “taxed” a small portion of his treat!

The 3 Minute Chocolate Cake recipe is all over the net.  It was okay.  But I wanted really good, so I played with the recipe.  Here’s what I came up with:

1/4 cup almond meal

2 T cocoa

1/4 t. baking powder

5 packets Splenda

1 T butter, melted

2 T vanilla sugar free syrup (Torani or DaVinci)

1 egg

Mix all ingredients.  Pour into a small glass bowl.  Microwave until almost dry.  Do not overcook.  It will dry a bit more after you take it out of the microwave.  Run a knife around the edges of the cake and invert on serving dish.  Let cool.  Mix cream cheese with 1 t. sugar free raspberry syrup (or 1/4 t. vanilla or raspberry extract and Splenda).  Spread onto cake.  Makes two servings.

This is truly a decadent dessert… especially if you are low carbing!  One of my sisters occasionally eats the whole cake for a meal when she feels the need for some sweet pampering!

If you don’t want to add the cream cheese frosting, it is still delicious without a topping.

Low carbing has given me a whole new lease on life!

Today my blood pressure was down to 122/79.  Normal!!!!  My fasting blood glucose is running between 98 and 106!

And I’ve lost 9 pounds.

I can’t wait to see my doctor’s face when I see her the 21st.  She will be stunned at the improvement.  I think she was pretty much resigned to watching me gradually become debilitated.

I can’t see the weight loss except in my face.  I have cheekbones again!  Hope the weight loss moves on down to my muffin top soon!  😀

It is another very dreary rainy day.  It was so bad earlier, I wondered how the Casita would work as an Ark.

The weather really makes me a little envious of my blogger friends who are on the road to seek the sun.

……. It cleared up, the sun came out, and it got up into the 60’s after I posted the above!  My mood just skyrocketed up!  🙂

Leaving Sunday?

Ron and I went to our “groomer” yesterday and have fresh haircuts.  So now the 4 of us look presentable.  Although I posted photos of the dogs after their grooming session, I’ll spare you Ron’s and mine! 😀

Today was rainy, cold, high in the 40’s with thunderstorms predicted tonight.

I’ve had a wee setback.  Lethargy and chills.  Saw the doctor today who loaded me up with antibiotics and such and told me I was good to go to Florida!

We’re taking a break from packing today due to the weather.  Will get it done tomorrow, load the refrigerator Saturday, and take off Sunday.

I’ve decided not to mess with installing the fan on the trip.  I have an Endless Breeze fan we can use if we need a non-electric one.   I did buy a 12v extension cord so we can run the cord out of the kitchen vent and use the fan under the awning to help keep cool and hopefully blow bugs away, if needed.

And, oh joy….  I have instructions to go on a low carb, low fat diet.  That means no bread, no rice and no potatoes  — or beans (except green beans)!  Winter eating has done the number on me!
